January 23rd, 2008TeaI enjoy a good cup of tea but is it really possible to make a good one in a mug with a tea bag? Most tea-drinkers would agree that the best tea is served from a tea pot in a tea cup. Here are some basic instructions for making a perfect cup of tea (with thanks to George Orwell):

- Use only Tea from India or Sri Lanka (Ceylon). Not from China.
- Use a ceramic teapot
- Always warm the pot. This helps the brewing process by keeping the temperature higher for longer.
- Add around 6 tea-spoons of tea per litre of water for a strong cup (tea should always be served strong).
- Fill the kettle with fresh water and bring it to the boil. This maintains the oxygen content of the water.
- Take the teapot to the kettle and pour the boiling water over the tea in the teapot.
- Allow the tea to brew for at least 3 to 5 minutes with a least one stir during the brewing process.
- Pour the tea from the teapot into clean, ceramic tea cups. Purists do not use tea strainers.
- Lastly, add a small amount of milk.
- Do not add sugar!.
Follow these instructions and then sit back and enjoy the fruits of your tea making efforts!
